This can be time-consuming to make, but it is absolutely worth the effort. I have made this several times for dinner parties and it is always a big hit. It is very spicy, though, so make sure your guests can handle the heat!

I loved this recipe, although admittedly I didn't make the crepes. In used pork cube steak for the protein and scrambled a couple of eggs in the corner or the skillet after mixing everything together at the end. A bag of broccoli slaw instead of the carrots and zucchini made this a quick weeknight meal. Oops, and I had leftover quinoa to use instead of rice. I know, I changed a lot but the basic flavors are the same and it was delicious!
