Old Durham Church Crab Cakes

Yield about 2 dozen


  • 2 pounds fresh crab meat, drained and flaked
  • 2 cups soft breadcrumbs
  • 2 eggs, beaten
  • 1/4 cup mayonnaise
  • 2 tablespoons minced onion
  • 2 teaspoons lemon juice
  • 2 dashes hot sauce
  • 2 teaspoons salt
  • 1 teaspoon dry mustard
  • 1/4 teaspoon paprika
  • 1/4 teaspoon pepper
  • 3 tablespoons vegetable oil

How to Make It

  1. Combine all ingredients, except oil, mixing well; shape into 2 1/2-inch patties. Cover and chill at least 1 hour.

  2. Heat oil in a large skillet; cook patties over medium heat 8 minutes on each side or until golden brown. Drain on paper towels; serve immediately.
