Spoon this spicy-sweet mix of tomatoes, onion, and peppers over fresh peas.
Makes about 2 cups
1/2 pound chopped fresh okra
1 tablespoon olive oil
1 (16-oz.) jar tomato relish
Sauté okra in hot olive oil in a large skillet over medium-high heat 3 to 4 minutes or until crisp-tender. Remove skillet from heat, and stir in tomato relish.
