Oklahoma Bean Pie

Yield one 9-inch pie

Ingredients

  • 1 (16-ounce) can navy beans, drained and pureed
  • 3 eggs, beaten
  • 3/4 cup sugar
  • 2 teaspoons vanilla extract
  • Pinch of salt
  • 1 unbaked (9-inch) pastry shell

How to Make It

  1. Combine beans, eggs, sugar, vanilla, and salt in a medium mixing bowl; beat well. Pour mixture into pastry shell. Bake at 350° for 45 minutes or until a knife inserted in center comes out clean. Cool pie before serving.
