- 1 cup quick-cooking oats, uncooked
- 1 cup buttermilk
- 1 egg, beaten
- 1 cup all-purpose flour
- 1/2 cup firmly packed brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup butter or margarine, melted and cooled
How to Make It
Combine oats and buttermilk in a medium mixing bowl; let stand 30 minutes.
Add next 6 ingredients to oats mixture, mixing well. Stir in melted butter.
Spoon batter into greased muffin pans, filling two-thirds full. Bake at 400° for 25 minutes or until golden brown. Cool slightly; remove from pan, and serve warm.
