Oatmeal Muffins

Yield 1 dozen

Ingredients

  • 1 cup quick-cooking oats, uncooked
  • 1 cup buttermilk
  • 1 egg, beaten
  • 1 cup all-purpose flour
  • 1/2 cup firmly packed brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup butter or margarine, melted and cooled

How to Make It

  1. Combine oats and buttermilk in a medium mixing bowl; let stand 30 minutes.

  2. Add next 6 ingredients to oats mixture, mixing well. Stir in melted butter.

  3. Spoon batter into greased muffin pans, filling two-thirds full. Bake at 400° for 25 minutes or until golden brown. Cool slightly; remove from pan, and serve warm.
