Oatmeal-Molasses Cookies

Ingredients

  • 2 cups sugar
  • 1 cup vegetable oil
  • 1/3 cup molasses
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 cups quick-cooking oats, uncooked
  • 1 cup raisins
  • 1 cup flaked coconut (optional)

Preparation

  1. 1. Preheat the oven to 350°. Combine first 4 ingredients in a large mixing bowl. Beat at medium speed of an electric beater until smooth.
  2. 2. Combine flour and next 4 ingredients; stir well. Add to sugar mixture, mixing well. Stir in oats, raisins, and, if desired, coconut.
  3. 3. Drop dough by heaping teaspoonfuls onto lightly greased cookie sheets. Bake at 350° for 10 minutes. Cool slightly on cookie sheets; remove cookies to wire racks, and let cool completely.
