Nutty Quinoa with Shrimp

  • 1/2 cup(s) onion chopped
  • 1/2 cup(s) carrot chopped
  • 1/2 cup(s) celery chopped
  • 1 tablespoon(s) olive oil, divided
  • 2/3 cup(s) uncooked quinoa
  • 2 tablespoon(s) peanut butter
  • 1/2 tablespoon(s) soy sauce
  • 4 cup(s) baby bok choy
  • 1 teaspoon(s) chopped garlic
  • 6 ounce(s) extra larg raw shrimp
  • salt and pepper, to taste


  1. In a medium pan, sauted onions, carrots and celery in 1 tsp olive oil for 5 minutes. Add 2 cups water, quinoa, peanut butter and soy sauce. Bring to a boi, reduce heat, cover and simmer until water is absorbed, about 10 minutes. In a second pan, saute baby bok choy, garlic, salt and pepper in 2 tsp olive oil. Add shrimp and cook until shrimp are pink, about 5minutes. Serve shrimp mixture over quinoa mixture
