Ingredients
- 1 med. onion thinly chopped
- 1 tablespoon(s) garlic minced
- 1 tablespoon(s) ginger minced
- 2 tablespoon(s) red wine vinegar
- 1 teaspoon(s) cumin
- 1 teaspoon(s) cinnamon
- 1 teaspoon(s) paprika
- 1/2 teaspoon(s) red pepper flakes
- 1 cup(s) water
- 1/2 teaspoon(s) salt
- 2 med. sweet potatoes cut into bite size pieces
- 1/4 cup(s) dried apricots chopped
- 2 cup(s) cooked chickpeas
- 1/4 cup(s) raisins
- 2 tablespoon(s) lemon juice
- 1/4 cup(s) almounds sliced
Preparation
- In med saucepan, combine onion, garlic, ginger, and wine. Cover and sweat over loe heat for 5 min. Add cumin, cinnamon, paprika, and red pepper flakes amd cook, uncovered, 1 min longer. Add water, salt, sweet potatoes and apricots. Bring to boil, cover, and simmer until sweet potatoes are just tender, about 15 min. Add rasins, chickpeas, and lemon juice. cook until chickpeas are hot. add Almonds.
