Nonno's Wild Rice Stuffing

Ingredients

  • 1/4 cup(s) butter
  • 3 cup(s) celery
  • 3 can(s) chicken broth
  • 1/2 cup(s) garlic
  • 1 package(s) giblets
  • 1 pound(s) mild Italian sausage
  • 1 cup(s) mushrooms
  • 1 cup(s) onions
  • 1/3 cup(s) parsley
  • salt and pepper
  • 1 package(s) wild rice (washed)

Preparation

Boil giblets and keep stock. Saute onion and celery in 2 tbsp butter. Remove from pan. Add remaining butter to pan and saute mushrooms; remove. Brown and crumble sausage. Add all ingredients to stock pot. Steam mixture until wild rice pops open, adding stock and/or chicken broth gradually. You want only enough liquid to steam rice, so add slowing.
