Tastes like old-fashioned fried chicken--without the grease. To keep it crisp, make on picnic day. Give drumsticks to kids over 4 and boneless breasts to younger ones.

How to Make It

Prep time: 10 minutes
Cooking time: 25 minutes

Preheat the oven to 425 degrees and line a large baking pan with aluminum foil.

Whirl crackers into fine crumbs in food processor or blender. Add cheese, thyme, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Whirl briefly. Scrape into a bowl. Stir in olive oil.

Spread 1 side of each piece of chicken with mustard and sprinkle with salt and pepper. Press chicken mustard-side down into crumb mixture; place in pan, coated side up.

Bake chicken for 25 minutes, or until cooked through. Remove from oven and allow to cool slightly in pan.

How kids can help: Measure ingredients; crush crackers (in sealed plastic bag); stir crumb mixture.
