THIS IS A FANTASTIC 'NO BAKE COOKIE' THAT'S BEEN AROUND FOR YEARS. I DON'T ADD THE FLAKED COCONUT AND I USE SPLENDA IN PLACE OF REGULAR SUGAR TO LOWER THE CALORIES AND CARBS. FOLLOW THE DIRECTIONS ON THE SPLENDA BOX FOR CORRECT AMOUNT TO EQUAL 2 CUPS.

I left out the coconut because of personal taste, but these are exactly like the ones my mama used to make when I was younger. My non-sugar liking husband loved them, too. Amazing!

I've never added coconut but I bet they are outstanding with that addition. Make a double batch. You'll eat one .. batch that is!

These were quite good. I cut recipe by 1/4 to make 12 cookies. Used 1 TBSP coconut oil instead of butter. 1/4 cup splenda blend. Way too sweet, could likely cut to 2 TBSP, maybe even use some applesauce. Used unsweetened almond milk and did not use coconut. Used ground flax instead of cocoa. Added tablespoon raisins and choc chips.

This cookie is the BEST!!! These are the same ones my high school would serve and quickly run out of. Now I make them for my family and friends and always get requests for more. The only thing I substitute is I use coconut oil instead of butter since it adds to the coconut taste in them. We all think they're perfect just the way they are!

I like these cookies alot but in our scholl they made them with no chocolate they almost tasted like butterscotch. If anyone has that recipe I would love to have it.
