THIS IS A FANTASTIC 'NO BAKE COOKIE' THAT'S BEEN AROUND FOR YEARS. I DON'T ADD THE FLAKED COCONUT AND I USE SPLENDA IN PLACE OF REGULAR SUGAR TO LOWER THE CALORIES AND CARBS. FOLLOW THE DIRECTIONS ON THE SPLENDA BOX FOR CORRECT AMOUNT TO EQUAL 2 CUPS.
This cookie is the BEST!!! These are the same ones my high school would serve and quickly run out of. Now I make them for my family and friends and always get requests for more. The only thing I substitute is I use coconut oil instead of butter since it adds to the coconut taste in them. We all think they're perfect just the way they are!
