New Potatoes and Pesto

Ingredients

1 1/2 pounds new potatoes
1 teaspoon kosher salt
1 cup store-bought pesto

Preparation

Place the potatoes in a medium pot, cover with cold water, and bring to a boil. Add the salt, reduce heat, and simmer until tender, 12 to 15 minutes. Drain and run under cold water to cool. Cut into quarters. Serve with pesto for dipping.
