Combine first 6 ingredients in a large, heavy saucepan. Bring to a boil over medium-high heat, stirring constantly. Gradually add milk and extract, stirring constantly with a whisk. Heat to 180° or until tiny bubbles form around edge, stirring with a whisk (do not boil).
Excellent! Made this for my husband to surprise him one morning as he loves hot chocolate and I had everything on hand. Came out surprisingly "dark" and very, very, thick, almost like a pudding. He ended up not finishing it and saved the rest for the night and added more milk. Has a chocolaty, "earthy" taste. Next time I may add a peppermint stick when serving or a cinnamon stick.
I tried this recipe on a chilly night and it really hit the spot. My husband loved it, too, especially with the addition of a few marshmallows on top. Not too sweet and very tasty, the spices give it a nice warmth and depth of flavor.
