- 1 1/4 cup(s) Flour (cake flour)?
- 1 1/4 cup(s) Milk
- 3 Eggs
- 1 pinch(s) Salt
- Hand best eggs with hand whip or hand mixer until lemon colored and foamy . Add milk which is room temp, and stir in until blended but do jot over beat. Add flour all at once. Hand beat till foamy and smooth on top. Grease popover tins lightly but well. Pour popover batter into a pitcher and fill every other hole with batter( so when the popovers rise they will not touch each other. Bake at 450 for 15 minutes. Reduce heat to 350 for 30 minutes. When ready yo serve popovers remove them from the tin with a sharp knife and serve hot. Caution do not open oven door yo check they will fall.
