Ingredients

  • 1 1/4 cups water
  • 3/4 cup Israeli couscous
  • 1/3 cup chopped Vidalia or other sweet onion
  • 3 tablespoons chopped fresh basil
  • 2 tablespoons fresh orange juice
  • 1/4 teaspoon salt
  • 1 medium nectarine, diced

Preparation

  1. 1. Bring water to a boil. Add couscous. Reduce heat to medium-low; cover and simmer 8 minutes or until liquid is absorbed. Stir in onion, basil, orange juice, salt, and nectarine.
