Ingredients

  • 4 lb chuck (pot) roast
  • Salt & pepper
  • 1-2 onions, cut in chunks
  • 4-5 cloves garlic, whole
  • Potatoes, cut in chunks
  • Carrots, cut in chunks

Preparation

  1. 1. Preheat oven to 325.
  2. 2. Pat meat dry, sprinkle with salt and pepper, and brown on each side for 10-15 mins in dutch oven.
  3. 3. Fill bottom of pan with 1" of water. Place sliced onion on top and aside of meat. Put garlic beside meat.
  4. 4. Bake in oven about 3-4 hours. One hour before done, put chunked vegetables around roast and cover with liquid. Return to oven without cover until vegetables are cooked through.
