- 2 1/2 pound(s) Yukon Gold Potatoes
- 2 yellow onions
- 2 tablespoon(s) coarse mustard
- 3 tablespoon(s) olive oil
- 2 teaspoon(s) kosher salt
- 1 teaspoon(s) pepper
- Toss all ingredients together.
- Arrange in single layer on sheet pan.
- Roast at 350 degrees for 50 minutes to 1 hour.
- Parsley on top.
