We assigned our highest flavor rating to this easy recipe. All you do is spread on a paste of spices, Dijon mustard, and lemon juice, then broil the chops.
2 garlic cloves, minced
1/2 teaspoon pepper
1/4 teaspoon dried thyme
1/8 teaspoon salt
2 teaspoons fresh lemon juice
2 teaspoons Dijon mustard
1 teaspoon olive oil
4 (5-ounce) lean lamb loin chops
How to Make It
Combine garlic, pepper, thyme, and salt in a small bowl; mash with back of a spoon until mixture forms a paste. Stir in lemon juice, mustard, and olive oil.
Trim fat from chops. Spread garlic mixture over both sides of chops. Place chops on rack of a broiler pan coated with cooking spray. Broil 5 1/2 inches from heat 6 to 7 minutes on each side or to desired degree of doneness.
