    Wonderful dish. I have a feeling the longaniza sausage I got from the butcher at the latino market was quite a bit different from the one in the recipe - it contained virtually no fat. Might be quite a bit of local variation. Also, the pictured dish clearly has yellow, red and green bell peppers - it definitely makes for a prettier dish. I think I would do the same next time.
