Mushroom and Zucchini Orzo

    Not very favorful. Needs more taste. Probably would add some fat free Itailian dressing next time. I used green beans and jarred roasted red peppers instead of mushrooms and zucchini and even used some juice from the red pepper jar. Still was very bland.

    My husband and I both liked this side dish. I served it with the Balsamic Chicken and Roasted Tomato dish. I left out the mushrooms, because I didn't have any. It needed a little something extra, so I grated some fresh Parmesan cheese in.

    Needs a good amount of salt! I can understand how people don't LOVE this dish.. not a lot of flavor, but I'd probably make it again because it was so easy to make.

    I cooked three minced cloves of garlic with the mushrooms and zucchini and used fresh oregano instead of the dried oregano and it was really delicious!

    Used brown rice instead of orzo. Pretty bland overall - and that's after I tried to boost the flavor by cooking the rice in chicken broth, adding garlic to the zucchini and doubling the amount of oregano. Easy recipe and I might try it again with other additions/seasonings - but the recipe as is isn't all that good.
