Mushroom Paprika

Yield 6 to 8 servings

Ingredients

  • 3 medium onions, chopped
  • 3 tablespoons butter or margarine
  • 1 1/2 pounds fresh mushrooms, cleaned and sliced
  • 1 1/2 cups chicken broth
  • 2 teaspoons paprika
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper
  • Mashed potatoes (optional)
  • Hot cooked rice (optional)

How to Make It

  1. Sauté onion in butter in a large skillet until tender; add remaining ingredients, stirring well. Cook over medium heat, stirring occasionally, 15 minutes or until mushrooms are tender. Serve over mashed potatoes or hot cooked rice, if desired.
