  • 9 ounces all-purpose flour (about 21/2 cups)
  • 9.5 ounces whole-wheat flour (about 2 cups)
  • 1.8 ounces spelt flour (about 6 tablespoons)
  • 1 cup yellow cornmeal
  • 1/2 cup sugar
  • 1/2 cup malted milk powder
  • 3 tablespoons baking powder
  • 2 tablespoons toasted wheat germ
  • 1 tablespoon salt


  1. 1. Weigh or lightly spoon flours into dry measuring cups; level with a knife. Combine flours and remaining ingredients in a large bowl, stirring with a whisk. Store in an airtight container in refrigerator.
