    I needed a quick dinner last night and found this recipe online. Using this recipe and ingredients I had on hand, I made an amazing sandwich!! First, I mixed a bit of basil pesto with the mayo and spread that on both sides of the ciabatta rolls. Then I layered chicken, roasted red pepper strips, sliced tomatoes, fresh spinach leaves, and shredded mozzarella. I then lightly sprayed both sides of the rolls with oil and put them in my panini grill for approx 4 minutes. Yum!! This is a good basic sandwich with loads of possibilities.

    While a little time-intensive, this sandwich is a knockout. The flavors meld wonderfully together! The only difference for me was that my bakery had individual ciabatta rolls, which was very convenient! I made it for a couple of girlfriends, and they raved! They said it tasted like a high end bistro sandwich. This is definitely a keeper.

    This was great! My family liked it too. One thought the sandwich had too much garlic though. I used regular pesto and added sundried tomatoes separately. Yummy! I might try using my panini maker next time too!

    A real WINNER!! My family loved this & definitely goes on the "One of our Favorites" list. Didn't change a thing except grilled chicken which I thought added to it. Served with CL Sweet Potato Wedges & slaw. Wonderful meal!!

    This is so good. I found a pack of 4 whole-grain ciabatta rolls @ the local wal-mart (in the deli). They were perfect! This is so easy and would be a great make-ahead for a picnic or pool party.

    I didn't think this recipe really needed another 5-star review, but I just had to share my husband's critique...He said "I looked forward to every bite of that sandwich." I thought that was funny! Also, I had doubled the recipe (could only find a 16oz loaf of ciabatta), so I wrapped the remaining half in foil and reheated in the oven the next day. I think it was even better the second day!

    I've made this several times and we love it. Quick & easy. I usually use ciabatta bread, but have used regular hamburger buns too (just as good).

    Delicious! I've made this several times and everyone has loved it. It's especially great in the summer with fresh from the garden tomatoes and basil and freshly roasted red bell pepper. Great for weekend lunch or a busy weeknight dinner.

    OK, this sounded good when I read it. And, after I made this for the family - it was AWESOME! Sorry, but I'm so glad to find this easy recipe and so yummy! Follow it exactly and you'll have a hit. I modified it by doing the chicken breasts parmesan (bread crumbs and parmesan, cooked in olive oil) then do exactly as the recipe says. So easy. One word of caution, this dish can be fairly expensive if you have to go with the real tomato pesto and red peppers. You need the flavors but don't expect it to be cheap to fix. I bought enough chicken to make for leftovers.

    The only change I made was that I used frozen grilled chicken which made the prep much faster. It was really outstanding. Love the sauce.

    WOW! My husband says he would rather stay home and eat these sandwiches then to go out to eat anyday!! He said they were better then anything you would find any where else for easily $8-10! Easy to make and SOOO good! We had it for super bowl with a side of greek seasoned grilled mushrooms and a side a dip and chips :) YUMMY!!

    Excellent! My husband and teenage daughters raved about the flavor explosion these sandwiches offered. I followed the recipe to a 'T', however I used fresh mozzarella cheese cut into slices instead of shredded, which only enhanced the texture of this colorful meal. This recipe is going into the 'keep' file.

    Unbelievably delicious! We could not stop eating this. It was so good and easy to make. All the flavors blend fantastically well and it's by far the best sandwich I've eaten in my life.

    This sandwich is delicious and we've made it a number of times. Rather than pan-frying, we grill the chicken and it really works well with the other flavors.

    For the first time I prepared a recipe exactly as written and this one was great!!! Made it last night and couldn't have been more pleased. I can't think of anything I would add to it. Can't wait to make it again. My husband was delighted with this dish as was I.

    This sandwich makes a fast, tasty meal. I had some leftovers on hand, so I used the recipe more as a template. I toasted a french baguette, mixed mayo with traditional basil pesto, piled on shredded rotisserie chicken, fresh spinach and mozzarella and topped it with fresh tomato from the farmers market. Yum!

    This sandwich was delicious! My husband can be picky and he loved this. I couldn't find sun-dried tomato pesto, so we used basil pesto and it was yum!
