The frosting has a great texture but we found it just has too much rum (we used Myers Dark) in it for us to work well with the suggested cake (Grandpa's Chocolate-Rum Cake.) We dipped strawberries into the extra frosting and preferred it this way. I can imagine using this recipe to thinly frost a moist tart flavored cake or perhaps a spice cake.

Ingredients
- 2 cups whipping cream
- 1 cup sifted powdered sugar
- 1 cup unsweetened cocoa
- 1/2 teaspoon almond extract
- 1/2 teaspoon vanilla extract
- 1/2 cup dark rum
Preparation
- Beat whipping cream until foamy; gradually add powdered sugar and next 3 ingredients, beating until blended. Add rum; beat until thick and smooth.
