Monsteroni Salad


  • 1 1/2 elbow macaroni, cooked
  • 3 cups sliced mushrooms, diced
  • 15 cherry tomatoes, halved
  • 1 cup yellow or red pepper, sliced
  • 1/2 cup green onions, chopped
  • 3/4 cup sliced black olives, drained
  • 1 cup crumbled feta cheese
  • Optional: 3/4 cup pepperoni, diced
  • 1/2 cup olive oil
  • 1/2 cup red wine vinegar
  • 1 1/2 teaspoons garlic powder
  • 1 1/2 teaspoons dried basil
  • 1 1/2 teaspoons dried oregano
  • 3/4 teaspoon pepper
  • 3/4 teaspoon sugar


  1. In a large bowl, combine macaroni, vegetables, cheese and pepperoni, if desired; set aside. Whisk together remaining ingredients in a small bowl. Pour over macaroni mixture and toss until evenly coated. Cover and chill 2 hours to overnight.
