Monsteroni Salad

Gooseberry Patch


1 1/2 elbow macaroni, cooked
3 cups sliced mushrooms, diced
15 cherry tomatoes, halved
1 cup yellow or red pepper, sliced
1/2 cup green onions, chopped
3/4 cup sliced black olives, drained
1 cup crumbled feta cheese
Optional: 3/4 cup pepperoni, diced
1/2 cup olive oil
1/2 cup red wine vinegar
1 1/2 teaspoons garlic powder
1 1/2 teaspoons dried basil
1 1/2 teaspoons dried oregano
3/4 teaspoon pepper
3/4 teaspoon sugar


In a large bowl, combine macaroni, vegetables, cheese and pepperoni, if desired; set aside. Whisk together remaining ingredients in a small bowl. Pour over macaroni mixture and toss until evenly coated. Cover and chill 2 hours to overnight.
