mom's beef soup

Ingredients

  • london broil or thick piece of beef - 2 inches thick with the bon
  • 3-4 soup bones
  • 4 beef ribs
  • 3-4 carrots
  • 3-4 celery
  • 1 onion - large
  • 3 packages beef broth
  • 1 can tomato paste

Preparation

fill a large pot, 6-8 quarts, with water. add meat and simmer about 1/2 hour. Skim the fat and foam off the top.

add remaining ingredients and season with salt. simmer 2 - 21/2 hours until meat is tender.

strain soup in another pot and add cooked pasta. you can add celery, carrots and shreaded meat. the meat can also be shredded and sauted with vinegar peppers.
