Ingredients

  • 1 1/4 cups unprocessed wheat bran
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 3/4 cup unsweetened applesauce
  • 1/2 cup fat-free milk
  • 1/3 cup dark molasses
  • 1/4 cup egg substitute
  • 1 tablespoon vegetable oil
  • 1/2 cup raisins
  • Cooking spray

Preparation

  1. 1. Preheat oven to 400°.
  2. 2. Combine first 5 ingredients in a bowl; make a well in center of mixture. Combine applesauce and next 4 ingredients; add to dry ingredients, stirring just until moistened. Stir in raisins.
  3. 3. Spoon batter into muffin pans coated with cooking spray, filling two-thirds full. Bake at 400° for 18 to 20 minutes or until golden. Remove from pans immediately, and place on a wire rack.
