Obviously there is no substitute for real hollandaise..having said that, I am always looking for a good and easy substitute when I am feeling guilty about calories. This is a decent substitute and very easy. I think it is too thick so cut back on the flour or add more mill.
Mock Hollandaise Sauce
Yield: 1 1/4 cups
- 2 egg yolks
- Thick White Sauce
- 3 tablespoons lemon juice
- Dash of red pepper
- Beat egg yolks; gradually stir about one-fourth of hot Thick White Sauce into egg yolks. Stir into remaining hot Thick White Sauce. Cook over medium heat 2 minutes, stirring constantly. Remove from heat; gradually add lemon juice, stirring well. Stir in pepper.
