Ingredients
- 2 tablespoons red wine or sherry vinegar
- 2 tablespoons olive oil
- 12 cups mixed baby greens (10 oz.)
- 2 tablespoons chopped fresh herbs such as chives, tarragon, basil, or a combination
- 1 cup miniature cherry tomatoes, such as Sweet 100s (about 8 oz.)
- 4 ounces goat cheese, crumbled
- Salt and pepper
Preparation
- In a large bowl, whisk vinegar and olive oil until well blended. Add greens, herbs, tomatoes, and goat cheese and mix to coat. Add salt and pepper to taste.
