Ingredients

  • 2 tablespoons red wine or sherry vinegar
  • 2 tablespoons olive oil
  • 12 cups mixed baby greens (10 oz.)
  • 2 tablespoons chopped fresh herbs such as chives, tarragon, basil, or a combination
  • 1 cup miniature cherry tomatoes, such as Sweet 100s (about 8 oz.)
  • 4 ounces goat cheese, crumbled
  • Salt and pepper

Preparation

  1. In a large bowl, whisk vinegar and olive oil until well blended. Add greens, herbs, tomatoes, and goat cheese and mix to coat. Add salt and pepper to taste.
