I was looking for a sophisticated and healthy salad to accompany the Champagne and Orange Steamed Lobster Tails recipe from this site. This salad was perfect and was only two points on the Weight Watchers plan. I served Heart Healthy Bisquick biscuits as a side. I might thin the dressing a little the next time I make it. I have some left over so I am anxious to try it as a marinade or sauce for chicken. A keeper!!
Mixed Greens Salad with Pears, Goat Cheese, and Fig Vinaigrette
The vinaigrette's sweet-tart taste makes it well suited for a marinade for grilled or roasted pork and chicken.

Ingredients
- 6 cups mixed salad greens
- 1 1/2 cups thinly sliced, cored Bosc pear (about 1)
- 1/4 cup (1 ounce) crumbled goat cheese
- 6 tablespoons Fig Vinaigrette
Preparation
- Place 1 cup greens on each of 6 plates; top each serving with 1/4 cup pear and 2 teaspoons goat cheese. Drizzle 1 tablespoon vinaigrette over each serving; serve immediately.
