Mixed Berry Clafoutis from the AJC

Super quick & easy, and a far cry from the average cobbler, this elegant French classic has been gaining popularity lately. It's essentially sweet custard, poured over fruit and baked until set and puffy, then dusted with confectioner's sugar.

  • 3 eggs
  • 1/3 cup(s) sugar
  • 1 1/2 cup(s) heavy cream
  • 1 teaspoon(s) vanilla extract
  • 1/4 cup(s) flour
  • 1 cup(s) fresh raspberries
  • 1 cup(s) fresh blackberries
  • 1 cup(s) fresh strawberries
  • confectioner's sugar for dusting


  1. Preheat oven to 325 degrees. In a medium bowl, whisk together eggs, sugar, cream and vanilla until frothy. Add the flour and whisk until smooth.
  2. Grease a 6 cup baking dish and arrange the berries in the bottom of the dish. Pour the egg mixture over the fruit and bake for 55 minutes until set and golden. Dust with confectioner's sugar to serve.
