Mixed Bean and Chorizo Cassoulet

Ingredients
- 100g Chorizo Small Cubes
- 1 small tin of each Butter Bean, Borlotti Bean
- 1 Leek Fine Slice
- 2 Cloves Garlic Fine Chopped
- 400ml Passata
- 200ml Chicken stock
- 1tsp brown sugar
- Pinch Chilli Flakes
Preparation
- Add the Chorizo to a cold Casserole dish and put on a low heat. Fry for 5-10mins for it to release its oils. Add the Garlic, Chilli Flakes, Leek and sugar, fry for 5 mins. Drain the beans and add them with the passata and stock. Put into an oven and cook for an hour at 180c
