Miso-Glazed Eggplant (Nasu Miso)

    Husband has never liked eggplant. every year we try to find a way to use the ones that come in our CSA box. He actually liked this! Didn't say, "yeah it's not so bad this way"...actually said he liked it! I loved it and am wondering what else I can use that baste on? served it with Szechuan green beans with ground pork. Very light and fresh dinner!

    Simple to make and absolutely delicious to eat. Not many recipes make it to the "keeper" file with so many to try. But this is a definite "keeper".

    Fast, easy and delicious. I wouldn't change a thing, and will make it over and over again. We ate it over rice. It could be an hors d'oeuvre. It was our main dish.

    I loved this recipe. I would definitely make it again, and I think I'll try the miso glaze on pork or beef as well. Yummy!
