Minute Minestrone
Ingredients
- 1 (15.8 ounce) can great Northern beans, rinsed and drained
- 2 (14 1/2-ounce) cans diced tomatoes with basil, garlic, and oregano, undrained
- 2 (11.5-ounce) cans vegetable juice
- 2 cups water
- 1 (10-ounce) package frozen mixed vegetables
- 1 teaspoon pepper
- 1 1/2 cups uncooked quick-cooking brown rice
- 1/2 cup pesto sauce
Preparation
- Bring first 6 ingredients to a boil in a Dutch oven. Stir in rice; cover, reduce heat, and simmer 5 minutes. Remove from heat, and let stand 5 minutes. Stir in pesto.
