56 vanilla wafers, crushed (less than 1 [11-oz.] box)
1 cup chopped pecans, toasted
1/2 cup powdered sugar
2 tablespoons unsweetened cocoa
4 1/2 teaspoons light corn syrup
6 tablespoons peppermint schnapps
3 cups white chocolate morsels
Crushed hard peppermint candies
How to Make It
Stir together first 6 ingredients; shape into 32 balls. Microwave chocolate in a bowl at HIGH 30 seconds; stir. Microwave 20 more seconds or until smooth, stirring once. Coat balls in chocolate. Immediately sprinkle with crushed hard peppermint candies. Place in a parchment paper-lined pan. Chill 30 minutes or until set.
How do recipes like this get into print? It is close, but could be great! The schnapps is too faint a peppermint taste. Add some mint extract. Also, I increased the amount of corn syrup by at least 2 teaspoons to make the dough stick together better. (Why 4 & 1/2?) Use the whole box of Nilla Wafers. I painstakingly counted out 56, and there were fewer than 10 left in the box. With these easy fixes, it's a tasty and festive holiday cookie!
