Minted Pea Soup

    Worthy of a Special Occasion

    This is a nice soup, pleasant flavors. Made the soup as directed, using frozen peas and fat-free half and half since I didn't have 1% milk. Also used an immersion blender for ease. Added a parmesan rind to the finished soup to soak up some added taste and did not add the salt called for at the end.

    Used fresh peas, and the soup had wonderful flavor! Very rich and creamy, almost foamy. I recommend pureeing the mint in with the other ingredients, and adding a bit more, for stronger mint flavor.
