Mint Vinaigrette

This recipe goes with Couscous-and-Garbanzo Salad

Ingredients

  • 2/3 cup fresh mint, chopped
  • 3 tablespoons white wine vinegar
  • 2 garlic cloves
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup olive oil

Preparation

1. Process first 7 ingredients in a food processor until minced, stopping to scrape down sides. With processor running, add olive oil in a slow, steady stream until blended.
