Mint Vinaigrette

2/3 cup fresh mint, chopped
3 tablespoons white wine vinegar
2 garlic cloves
1 teaspoon Dijon mustard
1/4 teaspoon sugar
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup olive oil


1. Process first 7 ingredients in a food processor until minced, stopping to scrape down sides. With processor running, add olive oil in a slow, steady stream until blended.
