Mint Pesto

Add a pop of color and garden-fresh flavor to any main-dish meat. This pesto is great over steak, chicken, lamb, pork, and fish. Simply top the meat after grilling, or just serve the pesto on the side.

Ingredients

2 cups loosely packed fresh mint leaves
1/2 cup grated Parmesan cheese
1/3 cup olive oil
1/4 cup pine nuts
1/4 cup cold water
2 garlic cloves
1 tablespoon lemon juice

Preparation

Process all ingredients in a food processor until smooth, stopping to scrape down sides as needed.
