This is great to add something different to iced tea. It reminds me of a mojito without the alcohol! I also tried it with lemon peel and that was very good, too.
Mint-Lime Syrup

Ingredients
- 1/4 cup chopped fresh mint leaves
- 3 (2-inch) strips of lime rind
- Simple Syrup
Preparation
- Place mint leaves in a small bowl. Add strips of lime rind and hot Simple Syrup; cover and let stand 30 minutes. Strain mixture through a sieve; discard solids.
