Miniature Luncheon Muffins

Yield 3 dozen

Ingredients

  • 1/3 cup butter or margarine, softened
  • 1/3 cup sugar
  • 1 egg
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk

How to Make It

  1. Cream butter; gradually add sugar, beating until light and fluffy. Add egg, and beat mixture until well blended.

  2. Combine flour, baking powder, and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture.

  3. Spoon batter into greased miniature muffin pans, filling two-thirds full. Bake at 400° for 12 minutes or until lightly browned.
