Mini Pesto-Turkey Meatloaves

    These are quick, flavorful and moist. They are a great addition to recipes for ground turkey. I made some gnocchi and tossed them in a little more of the pesto as a side dish.

    This recipe is a very welcoming change to the traditional meatloaf. It was delicious and something that I'll definitely make again. My husband added a bit of hot sauce (Siracha or Tapatio will work) while eating it which gave it a nice kick. Super good!!

    I was a little apprehensive when I pulled these out of the oven...they don't look all that appetizing. Ground turkey just doesn't cook up "pretty." Don't let that fool you, though...they're delicious! The pesto packs a huge punch of flavor. I thought they'd be dry, with no sauce and lean turkey, but they're surprisingly moist. Love the "muffin" presentation, too.
