You could have a much healthier version of this by using lean ground beef, not chuck which is around 20% fat. That means 20% of your food dollar is waste. The fallacy of cheaper hamburger is that there is more waste. Spend a little more per pound, but use only 1 pound of lean hamburger for fewer calories & much less fat.

Ingredients
- 1/4 cup ketchup
- 2 tablespoons light brown sugar
- 1 tablespoon Dijon mustard
- 1 1/2 pounds ground beef chuck
- 1 cup plain bread crumbs
- 1 cup canned tomato sauce
- 1 large egg, lightly beaten
- 4 teaspoons dried basil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper
Preparation
- Line a broiler pan with aluminum foil and place it in oven. Preheat oven to 425°F. Whisk together ketchup, brown sugar and mustard in a small bowl and set aside.
- In a large bowl, combine ground beef, bread crumbs, tomato sauce, egg, basil, garlic powder, onion powder, salt and pepper. Blend with your hands until well-combined. Divide into 4 equal portions and shape each into a mini loaf, about 4 inches long and 3 inches wide.
- Brush each meat loaf with some ketchup mixture. Remove pan from oven and mist with nonstick cooking spray. Carefully transfer meat loaves to hot broiler pan. Bake until an instant-read thermometer inserted into center of a loaf registers 160°F, 20 to 25 minutes. Remove from oven and let stand on broiler pan for 2 to 3 minutes. Use a wide spatula to transfer each meat loaf to a plate. Serve immediately.
