Mincemeat Drops

Yield 3 1/2 dozen

Ingredients

  • 1/3 cup shortening
  • 1/2 cup sugar
  • 1 egg, beaten
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup prepared mincemeat
  • 1/4 teaspoon vanilla extract

How to Make It

  1. Cream shortening in a medium mixing bowl; gradually add sugar, beating until light and fluffy. Add beaten egg, beating well. Combine flour, soda, and salt in a small mixing bowl; add to creamed mixture, stirring well. Stir in mincemeat and vanilla.

  2. Drop dough by teaspoonfuls 2 inches apart onto greased cookie sheets. Bake at 375° for 10 to 12 minutes. Cool slightly on cookie sheets. Remove to wire racks to cool completely.
