Making brittle doesn't get much easier than this! Forget the stovetop and candy thermometer, this microwave masterpiece is ready in under an hour.
1/2 cup sugar
1/4 cup light-colored corn syrup
1/4 cup coarsely chopped almonds
3 slices cooked and crumbled center-cut bacon
1 teaspoon butter
1/4 teaspoon vanilla extract
Dash of kosher salt
1/2 teaspoon baking soda
How to Make It
Combine sugar and corn syrup in a 2-quart glass bowl; cover with plastic wrap. Microwave at HIGH 2 minutes. Stir in almonds. Microwave at HIGH 2 minutes or until edge of mixture is a light caramel color. Stir in bacon, butter, vanilla, and salt. Add baking soda, and stir until foamy. Quickly pour mixture onto a jelly-roll pan lined with parchment paper; spread to 1/4-inch thickness. Let stand 30 minutes. Break into pieces; store in an airtight container up to 1 week.
