6 lbs. chicken
6 lbs. sausage
2 lbs. tasso
6 lbs. shrimp
6 lbs. onions
12 bunches scallions
1 bunch parsley
1 jar minced garlic
40 cups water
10 lbs. rice
12 chicken bouillon cubes
salt, black pepper, red pepper, garlic powder and Kitchen Bouquet
Sauted sausage in pot until just done. Cut chicken into bite size pieces season with salt and pepper saute into sausage drippings until just done and remove from pot. Saute onions, green onions and garlic until tender crisp.add meats water, rice and chicken boullion to pot and bring to boil. It should be slightly salty. Lower fire and cover and cook. It should be done in 30 - 45 mins. Cook until rice is almost done as it will continue to cook even with the fire off. from start to finish takes about 2 hours.
