Mexican Tortilla Soup
- 1 lb. browned ground turkey or beef
- 1 box Swanson low fat broth
- 2 cans diced tomatoes w/ green chile (Rotel)
- 1 16 oz. pk frogen corn
- 1 large onion
- 4 pressed garlic cloves
- 1/2 C diced green pepper
- 1/2 C diced red pepper
- 8 oz. cheddar cheese
- 1 pkg tortilla chips
- Brown meat--drain well. Combine all ingredients except cheese and tortillas. Bring to boil, then simmer for 2 hours. Thicken soup w/cheese & tortilla chips to you liking.
