If you are looking for a sweet pick me up treat, this is it. Plus you can make as much or as little as you want. Depending on the position of your oven rack, and how determined your broiler is, there is a good chance that you can burn the marshmallows, so just flipped on the over light and keep an eye on it. No need for more than 2 minutes. One of these smores and a glass of skim milk and I have my chocolate/sweet fix for at least a day or two... okay, maybe just until tomorrow night.
Mexican S'mores

Using the three classic s'more ingredients, this sweet treat is prepared under the broiler and uses cinnamon graham crackers. For an adult-friendly option, use spiced chocolate.

Ingredients
- 8 cinnamon graham crackers
- 8 marshmallows
- 4 1.5-ounce milk chocolate bars, broken into pieces
Preparation
- Heat broiler. Break the crackers in half to form squares. Place 8 cracker squares on a baking sheet and top each with a marshmallow. Broil until the marshmallows are puffed and lightly browned, about 1 1/2 minutes. Sandwich with the chocolate pieces and remaining crackers. Serve immediately.
Tip: Add a little zing to the Mexican S'mores for the adults: Substitute spiced chocolate bars (try the version from Vosges or Green & Black's) for the plain milk chocolate.
